Robs Southern baked black chicken.
You will need -
One large free range chicken.
One large banana.
One clove of garlic
Two tablespooms of unflavoured honey.
Four tablespoons of authentic cajun spice.
A bit of tinfoil.
Method--
Mix n mash bananas and honey.
Stuff it in the chicken.
Finely dice garlic -
Slide your finger between the breast skin
and the flesh/ dont rip skin now, on both sides
and push in garlic.
Now roll wet rinsed chicken in spice till
completely covered.
Cover ends of legs with foil/just the tips.
Bake in a median hot oven till very dark ( not burnt )
Turn down and cook till tender.
Serve with heaps of all your favorite baked vegetables.
And greens.
Sprinkle baked vegies with more spice and pour over yoghurt sauce ( see sauce page)Cajun spice can be very hot, thats it.
Goes great with beer or wine.
